Effect of Milling and Parboiling Processes on Arsenic Species Distribution in Rice Grains

This study identified the role of milling and parboiling on arsenic (As) content its species in large numbers rice samples. Total As contents were 108 ± 33 μg/kg polished grains (PR), 159 46 unpolished (UR), 145 42 parboiled (PPR) 44 (PUR). The percentages inorganic (iAs) 66% 8% PR from 72% to 77% other grain categories. polishing process reduced grains, removing outer part UR with high amount As, whereas technique transferred semimetal within grain. iAs not significantly different UR, PPR PUR, homogenizing distribution inside grains. results allowed understand how operations affect fate chemical forms
